A simple but delicious way to prepare King Oysters. It’s also a good way to prepare whole caps of Blue, Elm, Snow or Italian Oysters.
You need:
- 1 lb King Oyster Mushrooms
- 2 tbsp (30g) unsalted butter
- 2 cloves garlic, grated or finely minced
- ¼ tsp black pepper, ground
- 1 tbsp soy sauce
- ¼ tsp tamari
- ½ tsp honey or maple syrup
- Optional: ¼ tsp Worcestershire sauce, or condiment of your choice.
- Vegetable oil
Directions:
- Prepare the glaze: in a small pot or bowl combine butter, soy sauce, tamari and honey/maple syrup. Warm up everything until butter is molten, then add black pepper and garlic. Mix well and set aside.
- Slice mushrooms into ¼ inch thick slices.
- Heat a pan over medium high heat, generously coated with vegetable oil. Add a single layer of king oyster slices with some space between each slice and fry each side about 5 minutes, until golden brown. Repeat this step with the remaining mushrooms.
- Add all cooked mushrooms back to the pan, pour in the glaze and turn off the heat. Toss the mushrooms in the glaze using the residual heat.
