Glazed King Oysters

A simple but delicious way to prepare King Oysters. It’s also a good way to prepare whole caps of Blue, Elm, Snow or Italian Oysters.

You need:

  • 1 lb King Oyster Mushrooms
  • 2 tbsp (30g) unsalted butter
  • 2 cloves garlic, grated or finely minced
  • ¼ tsp black pepper, ground
  • 1 tbsp soy sauce
  • ¼ tsp tamari
  • ½ tsp honey or maple syrup
  • Optional: ¼ tsp Worcestershire sauce, or condiment of your choice.
  • Vegetable oil

Directions:

  1. Prepare the glaze: in a small pot or bowl combine butter, soy sauce, tamari and honey/maple syrup. Warm up everything until butter is molten, then add black pepper and garlic. Mix well and set aside.
  2. Slice mushrooms into ¼ inch thick slices.
  3. Heat a pan over medium high heat, generously coated with vegetable oil. Add a single layer of king oyster slices with some space between each slice and fry each side about 5 minutes, until golden brown. Repeat this step with the remaining mushrooms.
  4. Add all cooked mushrooms back to the pan, pour in the glaze and turn off the heat. Toss the mushrooms in the glaze using the residual heat.
